Taiwanese Satay “Sacha” Sauce.. notably the Bullhead brand is the bomb, a umami explosion of dried seafood, ginger, garlic, scallots, Chile and oil that’s so awesome for your hotpot dishes, or general stir fry. Word has it that it originally came from Chaozhou province in China but when ROC went to Taiwan it got readapted.
RED FIG 🍅 These little tomatoes in shape of a pear is extremely yummy. It’s a bit crunchy with a very balanced flavour. They can grow in relatively small pots (around 20cm depth). Just be aware that they are part of the indeterminate tomatoe varieties, meaning that you’ll never how big the plant can grow. One of mine is more than 2 meters high! 🍅

Clever: each recipe has an accompanying video. Three faves: sticky shiitake mushrooms (page 30), crispy chilli tofu (page 46) & sweet/sour tofu with green peppers, pineapple, red onion and ginger (page 59) which is the best in the book. Made it so often that the book falls open at this page.
What was the moment, where were you, why did you decide to go on this journey?
With 2-MICHELIN starred chef Moshik Roth I have a very special connection! Our first personal meeting was a kind of "Déjà-vu", as I had already met Moshik indirectly and culinary several times before... Many years ago, I dined at Jean-George Klein's legendary three-star restaurant "L'Arnsbourg". Moshik Roth was chef de cuisine for years in this cult place of "culinary avant-garde" in the tranquil Alsatian Baerental! Like his mentor Jean-George Klein, at the time, Moshik is a self-taught chef!
